A tropical, thirst-quenching blend of pineapple, coconut water, coconut milk and lime, chilled and served over ice.
# Ingredient List:
→ Fruit and juices
01 - 2 cups fresh pineapple chunks (about 1 medium pineapple, peeled and cored)
02 - 1 cup coconut water
03 - 1 cup cold water
04 - 1/3 cup freshly squeezed lime juice (approximately 2–3 limes)
05 - 1/4 cup canned coconut milk, well stirred
→ Sweetener
06 - 2–3 tablespoons agave syrup (or honey as an alternative)
→ Optional garnish
07 - Pineapple wedges
08 - Lime slices
09 - Fresh mint leaves
# Cooking Directions:
01 - Place the pineapple chunks, coconut water, cold water, lime juice, coconut milk and agave syrup in the blender.
02 - Blend on high speed until the mixture is completely smooth and uniform in texture, about 30–45 seconds depending on blender power.
03 - Taste and adjust sweetness or acidity, adding more agave or lime juice to balance brightness to your preference.
04 - If a silkier mouthfeel is desired, pour the puree through a fine-mesh sieve into a large pitcher, pressing gently with a spatula to extract liquid.
05 - Refrigerate for at least 30 minutes to chill, or serve immediately over ice for an extra-cold presentation.
06 - Ladle into glasses and garnish with pineapple wedges, lime slices and mint leaves as desired.
